How to choose a good vintage — our criteria

When it comes time to choose a bottle, here are the things to keep in mind:

  • The type of wine (red or white) — The majority are red, but if you are looking for a lighter, floral wine or one to accompany fish/poultry, a white Châteauneuf-du-Pape can be a pleasant surprise.

  • The grape variety or varieties / the blend — A red wine dominated by Grenache will often offer fruity and warm notes; the addition of Mourvèdre, Syrah or other grape varieties can bring structure, depth and aging potential.

  • The vintage/age of the wine — A young wine may be fruitier and more expressive, while an older wine will develop more complex and subtle aromas. Furthermore, many Châteauneuf-du-Pape reds are suitable for aging and can develop favorably over several years.

  • The meal or the occasion — Depending on the dish you are preparing (red meat, dish with sauce, game, cheese, light dish, etc.), the choice of wine will be different: a structured red for a rich dish, a white or more supple wine for a lighter meal.

How to enjoy it like a pro (even at home)

  • Serving temperature : For a red wine, ideally between 16 and 18 °C — this allows the full aromatic complexity to be revealed, without accentuating the alcohol.

  • Recommended glass : A fairly wide balloon glass, for reds — this helps aeration, releases aromas, amplifies the bouquet.

  • Aeration/Decanting : For a young or structured red wine, decanting for 30–60 minutes can help soften the tannins and open up the wine. For older wines, be careful: it is sometimes necessary to drink more frequently, but not excessively, to preserve their subtleties.

  • Food and wine pairings :

    • For a red wine: red meats, dishes with sauce, game, mature cheeses, rustic cuisine — the wine's ample character finds its expression there.

    • For a white wine: grilled fish, seafood, poultry or light Mediterranean dishes, or even refined vegetables or vegetarian dishes.
